Air Fryer Sausage Rolls

Air Fryer Sausage Rolls are a quick and easy party appetizer, snack, or brunch recipe that is always a favorite. Seasoned sausage wrapped with flaky puff pastry create an irresistible treat that is ready in under 20 minutes!
Growing up with British parents, sausage rolls were a required appetizer at every party and holiday gathering. My mother made her Sausage Rolls with shortcrust pastry (pie crust) until a friend of hers shared her recipe for Puff Pastry Sausage Rolls and they became an instant favorite.
Feel free to use the sausage filling from the puff pastry sausage rolls recipe above ^^ if you are looking for something fancier. I decided to stay true to the original recipe that I grew up with to keep things super simple!

Ingredients you will need
- Ground Pork Sausage – choose one that is not too salty or too greasy for best results.
- Rubbed Sage for added flavor. Substitute thyme or herbs of your choice.
- Puff Pastry Sheets defrosted in the refrigerator overnight, or according to package instructions.
- Egg beaten and brushed on top before baking to make them shiny. Substitute milk for a matte finish.

How to make sausage rolls in air fryer
Mix pork sausage and ground sage together.
Unwrap the package of puff pastry and place one sheet on a lightly floured surface. Place the second sheet back in the refrigerator until ready to use.
Roll the sheet into a 12 x 9-inch rectangle. Cut lengthwise along the folds, into three even strips.
Divide the sausage mixture into six portions. Form each portion into a long cylinder. Place in the center of each strip of pastry.
Roll pastry over the sausage and press the seams together to seal.
Tip: Dip your finger into a small bowl of water and run it along the seam to moisten. This will help keep the seams together.
Cut each sausage roll into 4 pieces and cut slits into the top with a sharp knife. Brush with beaten egg and set aside.
Set air fryer to 7 minutes at 400°F allow it to preheat. Press Air Fry >> press Time and turn the knob until it reads 7 minutes >> press Temp and turn the knob until it reads 400F.
Once it beeps, carefully add 12 sausage rolls to the air fryer basket and slide into the air fryer.
Follow the same process to make the remaining 12 sausage rolls.
When the air fryer beeps and display reads Turn Food, open the drawer only to check to make sure they are not over cooked. Close the drawer and allow sausage rolls to finish cooking, or remove if needed.
Carefully remove sausage rolls from air fryer basket and place on a plate. Allow to rest for 5 minutes before serving. Continue cooking the remaining sausage rolls.
Serve warm with HP Sauce, Coleman’s mustard, ketchup, or dipping sauce of your choice.
Can I make sausage rolls different sizes?
Smaller sized rolls are the perfect size for appetizers and larger ones are perfect for a holiday breakfast/brunch or quick lunch.
For medium sized, cut each sheet of puff pastry into 4 to 6 equal sized squares and divide sausage mixture between them. Larger sausage rolls may take longer to cook (about 10 minutes) so keep an eye on them, and you will only be able to fit 2 or 3 in the air fryer basket at a time.
For traditional British lunch size: cut each puff pastry sheet into 2 pieces (like the one in the center right below), fill will sausage meat and crimp the edges with the tines of a fork. Cook 2 at a time for 12 to 14 minutes.
Recipe Tips
- Preheating the air fryer before baking will make the pastry crisp and flaky.
- Just like ovens, all air fryers cook differently.
- Check internal temperature with a meat thermometer, should be 145°. If not cooked through, put them back in for a minute or two to finish baking. Allow to rest for 5 minutes before serving.
- There is no need to flip these sausage rolls over, the air circulates below the tray and crisps the bottom.
Recipe FAQs
To freeze: place baked or unbaked sausage rolls (without egg wash) on a baking sheet. Cover and freeze until firm. Remove the frozen rolls and store in a gallon size zipper top bag, or airtight container in the freezer for up to one month.
When ready to serve, bake from frozen as directed adding few minutes to the cooking time. Reheat baked rolls using the reheat function until heated through.
Store in an airtight container in the refrigerator for up to 5 days, not that they will last that long. Reheat in the air fryer using the reheat function.
