Frozen Tropical Margaritas

I went to the grocery store the other day and bought frozen mangoes and pineapple. I even got some orange juice and bananas with plans to make a tropical smoothie. You know, something healthy for breakfast! So I got the ingredients out of the freezer, pulled out the blender, started putting everything together…..and out came the tequila and Frozen Tropical Margaritas!!

It is Cinco de Mayo in a couple of days…and well I really don’t have an excuse, LOL So here it is….Frozen Tropical Margaritas!! If you leave out the alcohol you could still make them for breakfast. 😉

How to make Frozen Tropical Margaritas:

Add the frozen pineapple and mango chunks to a blender. You can cut up fresh and freeze it yourself, or you can buy it in the freezer section.

Pour in the tequila, lime juice, and orange liqueur…..

You will notice that I left out the banana. I tried it the first time with the banana, and no bueno!! That’s just me, feel free to toss one in if that makes you happy. 😉

How to make Frozen Tropical Margaritas

Blend until smooth. Gradually add liquid** as need until your have a perfectly smooth cocktail.

Rub or dip the rim of two margarita glasses in/with lime juice. Dip glass rim into the finely chopped coconut shreds.

Pour margaritas into the glasses and garnish with lime wedges……

In case  you are wondering, NO, I did not make these margaritas for breakfast! I made them at 3:00 in the afternoon after the sun had gone down. 🙁

It is the craziest thing….the sun goes up higher in the sky the closer we get to “summer”. Unfortunately, I do not have skylights, so I have no light coming through any windows in the house at any point during the day, LOL Note to self….go get quotes for skylights!!

Notes:

  • Liquid** – these margaritas would taste amazing with coconut water or milk…if I was not allergic to it. Orange juice is a nice addition as well….you choose.
  • Gradually add enough liquid to create a smooth texture. You may need more or less than the 1/4 that I used {it’s super dry here}.
  • If you prefer more pineapple flavor, swap out the measurements and add less mango and more pineapple. 🙂
  • Depending on the sweetness of your fruit, you may need to add a Tablespoon or two of super-fine sugar.

Ingredients

  • 1 ½ cups frozen mango chunks
  • 1 cup frozen pineapple chunks
  • 2 Tablespoons fresh lime juice
  • ½ cup silver tequila
  • 1 Tablespoon orange liqueur
  • ¼ cup liquid** orange juice, coconut water, pineapple juice
  • ¼ cup shredded coconut finely chopped
  • lime wedges to garnish

Instructions

  • Add the frozen pineapple and mango chunks to a blender.

  2. I grinned when I read “…out came the tequila.” Yes, it’s amazing how many healthy juices suddenly become rockin’ mixers with tequila or other fav booze. I mixed V8 Fusion to make a Fusioniti Martini the other day–ha! Pinned, and looking forward to this one!
